COOKING TIPS
Beans For Budget-Friendly Meals
Hearty beans add flavor-packed protein to many dishes. They are filling and also add fiber. Beans are an economical ingredient for budget-friendly meals. Beans make delicious dips, casseroles, salads, and chilis.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
RECIPES
Five Bean Salad
1 can (15 ounces) cut green beans, drained
1 can (15 ounces) yellow wax beans, drained
1 can (15 ounces) garbanzo beans, drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) kidney beans, rinsed and drained
1 green pepper, diced
1 onion, sliced very thinly or diced
2/3 cup sugar
3/4 cup vinegar
1/3 cup Watkins Original Grapeseed Oil
1 teaspoon Watkins Seasoning Salt
1/4 teaspoon Watkins Black Pepper
- Mix beans, green pepper and onions together in a large bowl.
- In a separate bowl or shaker jar mix sugar, vinegar, oil, seasoning salt and pepper. Pour over the vegetable bean mixture. Toss to coat vegetables.
- Cover and refrigerate over night to allow flavors to blend.
- Before serving, toss to coat and drain.
- Serve chilled on a lettuce leaf as a side salad or as a side dish to fish, poultry or beef. Serves 8-10.
Tip: Use fresh green beans. Rinse beans, then snap off the ends. Cook 2 1/12 cups prepared beans in boiling water for 3-5 minutes, to desired doneness. Drain and transfer beans to a bowl of ice water to chill.
Spicy Pork Three Bean Chili
2 tablespoons extra virgin olive oil
1 medium yellow onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 pound lean ground pork
1 tablespoon Watkins Cumin
1 teaspoon Watkins Paprika
1 teaspoon Watkins Chili Powder
1 can (20 ounces) diced tomatoes
1 can (15 ounces) pinto beans, drained
1 can (15 ounces) white beans, drained
1 can (15 ounces) kidney beans, drained
Watkins Sea Salt, to taste - All-Natural Sea Salt Grinder
Shredded Monterey Jack cheese, to garnish
- In a large Dutch oven or stock pot over medium heat, saute onion, bell pepper and garlic in oil until tender, about 8-10 minutes.
- Add ground pork and mix well. Add cumin, paprika, and chili powder, then stir to coat. Cook, stirring occasionally, until the meat is browned well.
- Stir in diced tomatoes (with juice), beans, and sea salt. Cover and let simmer for 20-30 minutes, until desired consistency is reached. Serve in bowls and garnish with shredded cheese. Serves 5.
Tip: Enjoy leftover chili on its own or get creative with it. For a yummy burrito, layer flour tortillas with reheated chili, shredded lettuce, cheese and sour cream, then roll. Or make nachos: Grease a glass baking pan, then fill with tortilla chips and top with spoonfuls of chili and sprinkle with shredded cheese. Bake in a 350 degrees F oven until bubbly, about 25 minutes; then garnish nachos with guacamole, salsa or sour cream.
Banana Walnut Muffins
1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons Watkins Baking Powder
1/2 teaspoon Watkins Cinnamon - on sale this month
1/4 teaspoon Watkins Ground Nutmeg
1 medium banana
1 large egg, lightly beaten
1/2 cup milk
1/3 cup butter, melted
1/2 teaspoon Watkins Original Double-Strength Vanilla - on sale this month
1/2 cup chopped walnuts
- Preheat oven to 375 degrees F. Line 12 muffin cups with paper liners.
- Combine the flour, sugar, baking powder, cinnamon and nutmeg in a medium bowl.
- Mash the banana in another medium bowl. Add the egg, milk, butter, and vanilla. Mix well. Add the banana mixture into the dry ingredients and stir until combined. Stir in the walnuts.
- Spoon the batter into the muffin cups. Bake until the muffins are golden brown and spring back slightly when touched, 20–25 minutes. Cool the muffins slightly, then transfer to a wire rack to cool completely. Makes 12 muffins.

BIRD WATCHING
I was looking out my kitchen window a few days ago and much to my surprise I saw a Great Blue Heron standing on the top of my neighbor's chimney! What an amazing sight! The bird perched there for about five minutes and then flew away. Learn more about Great Blue Herons.
If you've been watching the live web cams you know that all the Great Blue Heron young and the Red-tailed Hawk young in Ithaca, New York and the American Kestrels in Boise, Idaho have fledged their nests. The cams are still live and some of the birds occasionally return to the nests.
Go to my bird watching blog, Chickadees, Juncos, and Jays Oh My! and click on the links in the blog posts. You'll see the baby chicks in their nests and information about each species of bird. Check in each day to see their progress! These videos give amazing details of the live birds. You can see the detail of each feather!
The Great Backyard Bird Count was conducted February 17 through 20. People counted the birds in their yards, neighborhoods, and parks. This bird count helps provide informaiton about the bird populations in the US and Canada.
