RECIPES
Bruschetta Chicken Bake
1 can (14-1/2 oz.) diced tomatoes, undrained
1 pkg. (6 oz.) Stove Top Stuffing Mix for Chicken
1/2 cup warm water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 cup Italian salad dressing
1 teaspoon Watkins Basil
1/4 teaspoon Watkins Oregano
2 tablespoons Watkins Garlic Parmesan Snack and Dip Seasoning, New Seasonal Favorites Product, available September - December 31
1 cup shredded mozzarella cheese
Marinate chicken pieces in Italian salad dressing for one hour in the refrigerator.
Preheat oven to 400 degrees F.
Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
Layer marinated chicken, garlic parmesan seasoning, basil, oregano, and cheese in 3-quart casserole or 13x9-inch baking dish.
Top with stuffing mixture. Bake 30 minutes or until chicken is done. Makes 6 servings.
Chicken-Parmesan Bundles
4 oz. (1/2 of 8-oz. pkg.) cream cheese, softened
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained (squeeze out moisture)
1-1/4 cups mozzarella cheese, divided
6 Tbsp. Watkins Garlic Parmesan Snack and Dip Seasoning
6 small boneless skinless chicken breast halves (1-1/2 lb.), pounded to 1/4-inch thickness
1 egg
10 RITZ Crackers, crushed (about 1/2 cup)
1-1/2 cups spaghetti sauce, heated
Heat oven to 375 degrees F.
Mix cream cheese, spinach, 1 cup mozzarella and 3 tablespoons Garlic Parmesan Seasoning until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired.
Beat egg in shallow dish. Mix remaining Garlic Parmesan Seasoning and cracker crumbs in separate shallow dish. Dip chicken in egg, then roll in crumb mixture to evenly coat. Place, seam-sides down, in 13x9-inch baking dish sprayed with Watkins cooking spray.
Bake 30-35 minutes or until chicken is done (165 degrees F). Remove and discard toothpicks, if using. Serve chicken topped with spaghetti sauce and remaining mozzarella.
Cinnamon-Raisin Swirl Bread
If you have a favorite homemade bread recipe use it to make a loaf of Cinnamon-Raisin Swirl Bread. For a quicker method use frozen bread dough! I bought Bridgford Frozen Bread Dough at the supermarket. A package has three loaves.
1 loaf frozen bread dough
1/2 cup raisins
1/4 cup granulated white sugar
2 teaspoons Watkins Cinnamon
1 egg, beaten with 2 teaspoons warm water
Thaw the loaf of frozen bread dough in refrigerator or away from heat.
Put the raisins in a small bowl and cover with hot water. Let raisins plump for 10 minutes; then drain and set aside.
Sprinkle bread board with flour and roll dough into a rectangular shape slightly less wide than your baking pan and as long as you can make it for lots of swirly layers.
Brush surface of dough with egg wash and sprinkle generously with cinnamon and sugar. (The egg wash helps to hold the layers together. The swirls tend to separate when brushing with butter.) Sprinkle with the drained raisins. Roll up the dough and pinch the seam closed. Transfer loaf to a buttered or sprayed baking pan with the seam side down.
Place loaf pan with dough in a warm place to rise, 45-60 minutes.
Preheat oven to 375 degrees F. Bake bread in a 8 1/2 x 4 1/2 inch loaf pan for 25-30 minutes until golden brown.
Carefully remove bread from pan and allow to cool completely before slicing. Baked loaves can be frozen for up to three months.
Eat bread plain, with butter, with cinnamon honey butter, or toasted with butter and a sprinkling of Watkins Cinna-Cream Sprinkles. Also tastes great for chicken salad sandwiches!
Cinnamon Honey Butter
Just cream butter with a little honey, cinnamon and salt to make a spread that tastes as good alone as it does with a bit of jam. Yummy on toast, cornbread, biscuits, pancakes, or a warm flour tortilla.
1 stick (4 oz) unsalted butter, softened
1/4 teaspoon salt
1/2 teaspoon Watkins Cinnamon
3 tablespoons honey
In a mixer or by hand, cream the butter with the salt, cinnamon and honey until thoroughly mixed. Store in a covered container in the refrigerator.
Crispy Peanut Squares
1 cup sugar
1 cup light corn syrup
1 cup creamy peanut butter
1 teaspoon Watkins Vanilla Extract
6 cups crisp rice cereal squares
1 cup peanuts
Combine first 3 ingredients in a large glass bowl; microwave at HIGH 3 to 4 minutes or until melted, stirring once. Stir in vanilla.
Fold in 6 cups cereal and peanuts. Spread mixture into a lightly greased 13- x 9-inch pan. Cover and chill 1 hour or until set; cut into small squares. Makes 4 dozen squares.
Golden Apple Snack Cake
This moist, old-fashioned cake is simply delicious served warm with a dollop of whipped cream.
1/2 cup butter, softened
1 cup sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon Watkins Cinnamon
2-1/2 cups chopped peeled tart apples
1/2 cup chopped pecans
In a large bowl, cream butter and sugar until light and fluffy. Mix in the egg. Combine the flour, baking soda and cinnamon; gradually beat into the creamed mixture. Fold in apples and pecans.
Transfer to a greased 9-inch square baking pan. Bake at 350 degrees F for 32-38 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Yield: 9 servings.

BIRD WATCHING
The 2011-2012 season of Project FeederWatch begins in November. I'm hoping this season brings some new winged visitors to my backyard feeders!

I did have a pleasant surprise yesterday! I saw six Chestnut-Backed Chickadees at my feeders all at once! I put up bird houses (nesting boxes) in my back yard and they may have helped to increase the local chickadee population. Oak Titmice, California Towhees, Mourning Doves, White-Breasted Nuthatches, House Finches, Western Scrub Jays, Stellar's Jays, Goldfinches, and Anna's Hummingbirds continue to visit but in lesser numbers.
Two California Quail visited our backyard stopping to sun themselves on an azalea planter. The darker-headed one is the male quail and the lighter-colored one is the female.
