RECIPES
Alfresco Bean Salad
1/2 cup apple cider vinegar
4-1/2 teaspoons olive oil
1/2 teaspoon Watkins Chili Powder
Dash salt
Dash of Watkins Granulated Black Pepper
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
2 medium tomatoes, seeded and chopped
1/2 cup coarsely chopped fresh cilantro
1 small yellow onion, chopped
1 small red onion, chopped
1 jalapeno pepper, seeded and chopped
In a large bowl, whisk the vinegar, oil, chili powder, salt and pepper. Add the remaining ingredients and toss to coat. Chill until serving. Makes 12 servings.
Wear disposable gloves when cutting hot peppers. Avoid touching your face.
Antipasto Picnic Salad
This salad is a blend of meats, veggies and pasta. It goes together in no time, serves a crowd and tastes as delicious at room temperature as it does cold. If you are not feeding a crowd, halve the recipe.
1 package (16 ounces) medium pasta shells
2 jars (16 ounces each) giardiniera
1 pound fresh broccoli florets
1/2 pound cubed part-skim mozzarella cheese
1/2 pound hard salami, cubed
1/2 pound deli ham, cubed
2 packages (3-1/2 ounces each) sliced pepperoni, halved
1 large green pepper, cut into chunks
1 can (6 ounces) pitted ripe olives, drained
1/2 cup olive oil
1/4 cup red wine vinegar
2 tablespoons lemon juice
1 teaspoon Watkins Pizza and Pasta Seasoning from Grinder
1 teaspoon coarsely ground from Watkins Whole Black Peppercorn Grinder
1/2 teaspoon salt
Cook pasta according to package directions. Drain giardiniera, reserving 3/4 cup liquid. In a large bowl, combine the giardiniera, broccoli, mozzarella, salami, ham, pepperoni, green pepper and olives. Drain pasta and rinse in cold water; stir into meat mixture.
For dressing, in a small bowl, whisk the oil, vinegar, lemon juice, pizza and pasta seasoning, pepper, salt and reserved giardiniera liquid. Pour over salad and toss to coat. Refrigerate until serving. Serves 25.
Giardiniera, a pickled vegetable mixture, is usually available in a jar in mild and hot varieties and can be found in the Italian or pickle section of your grocery store.
Apple and Ginger Crumble (Slowcooker Recipe)
4 to 5 cooking apples, peeled and sliced
1/2 cup brown sugar, firmly packed
1/2 cup flour
3/4 cup rolled oats
1/2 teaspoon Watkins Ginger
1/4 teaspoon Watkins Nutmeg
1/2 teaspoon Watkins Cinnamon
1/3 cup butter
1/2 cup raisins or dried cranberries (optional)
- Lightly butter the slow cooker and place apple slices on the base.
- Combine sugar, flour, rolled oats, ginger and nutmeg and cut in butter, using a pastry blender or knife. Sprinkle this mixture over the apples.
- Cover and cook on low or auto 5-6 hours. Serves 4.
Peanut Butter-Banana Bars
BARS
1 1/4 cups all-purpose flour
1 1/2 teaspoons Watkins Baking Powder
1/2 teaspoon Watkins Cinnamon
1/4 teaspoon salt
1/2 cup chunky peanut butter
1/2 cup packed light brown sugar
1/4 cup unsalted butter, softened
1 egg
1 teaspoon Watkins Vanilla Extract
2/3 cup whole milk
1/2 cup crumbled dried banana chips
ICING
1/4 cup sugar
1 egg white
1 cup marshmallow creme
GARNISH
1/3 cup chopped salted roasted peanuts
16 dried banana chips, if desired
- Heat oven to 350 degrees F. Spray 8-inch square baking pan with cooking spray and dust with flour. Whisk flour, baking powder, cinnamon and salt in small bowl.
- Beat peanut butter, brown sugar and butter in large bowl at medium-high speed 2 to 3 minutes or until smooth. Beat in egg and vanilla until blended and smooth. At low speed, beat in flour mixture alternately with milk just until smooth, beginning and ending with flour mixture. Stir in 1/2 cup banana chips. Spread batter in pan.
- Bake 30 to 35 minutes or until rich golden brown, bars start to pull away from sides of pan and toothpick inserted in center comes out with a few moist crumbs attached. Cool in pan on wire rack.
- Meanwhile, heat sugar, 1 tablespoon water and egg white in medium saucepan over low heat. Beat at high speed 3 minutes or until soft peaks form. Remove pan from heat; beat in marshmallow crème 5 to 6 minutes or until almost cool and stiff peaks form. Spread over bars; top with peanuts and 16 dried banana chips. Makes 16 bars.

BIRD WATCHING
The 2010-2011 season of Project FeederWatch is over. I'm still feeding my backyard birds. There aren't as many birds visiting the feeders with the nicer weather. Some species have migrated to their summer homes and some are finding food in the flourishing plants and flowers.
I did have a pleasant surprise yesterday! I saw six Chestnut-Backed Chickadees at my feeders all at once! I put up bird houses (nesting boxes) in my back yard and they may have helped to increase the local chickadee population. Oak Titmice, California Towhees, Mourning Doves, White-Breasted Nuthatches, House Finches, Western Scrub Jays, Stellar's Jays, Goldfinches, and Anna's Hummingbirds continue to visit but in lesser numbers.
Two California Quail visited our backyard stopping to sun themselves on an azalea planter. The darker-headed one is the male quail and the lighter-colored one is the female.
American Gold Finches and Lesser Finches have been active in our backyard at the feeders and collecting materials to build their nests. The photo below shows two lesser finches. One is perched in the upper left corner and the other is in the lower right corner gathering cotton from the hanging netting bag.
