COOKING TIP
If you like to prepare food and freeze for future meals don't fill your freezer with baking dishes. Line dishes with foil before assembling a casserole, wrap and freeze the finished casserole and then lift from dish and store in a resealable freezer-weight plastic bag.

Eating to Prevent Osteoporosis
Changing your diet can be an effective, gentle, inexpensive and even delicious way to prevent, relieve or even reverse a wide variety of conditions. If you are at risk or have been diagnosed with osteoporosis, or simply want to help prevent future health issues, consider adding calcium-rich foods to your diet. Low-fat or non-fat dairy products, canned sardines and canned salmon, dark green vegetables such as broccoli, collard greens and bok choy, tofu, calcium-fortified juices and soy milk, black-eyed peas, molasses, poppy seeds, sesame seeds, almonds and figs are all good choices.

RECIPES
Smoked Sausage with Pasta
4 ounces uncooked angel hair pasta
1/2 pound smoked turkey kielbasa, cut into 1/2-inch slices
2 cups sliced fresh mushrooms
2 garlic cloves, minced
4-1/2 teaspoons minced fresh basil or 1-1/2 teaspoons Watkins Basil
1 tablespoon olive oil
2 cups julienned seeded plum tomatoes
1/8 teaspoon salt
1/8 teaspoon Watkins Pepper
Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the sausage, mushrooms, garlic and basil in oil until mushrooms are tender. Drain pasta; add to the sausage mixture. Add the tomatoes, salt and pepper; toss gently. Heat through. Makes four servings.
Hearty Pasta Tomato Soup (Crockpot Recipe)
I found this recipe in a Crockpot Recipe Blog Group. The blog is Across My Kitchen Table by Mrs. T.
6 cups beef broth made with 3 1/2 tablespoons of Watkins Soup Base and 6 cups boiling water
28 ounces stewed tomatoes
15-16 ounces tomato sauce
2 cups sliced zucchini
1 large onion, chopped
1 cup sliced carrots (I used baby carrots)
1 cup sliced fresh mushrooms
1 medium green pepper, chopped
1 lb. Italian link sausage, sliced about 1/2 inch thick
2 tsp. sugar
1 tsp. Watkins Oregano
1 tsp. Watkins Basil
1 garlic clove, minced
Pasta of your choice, or 2 cups frozen cheese tortellini
Grated Parmesan cheese, optional
Place all ingredients except the last two in a 5-qt. slow cooker. Cover and cook on High for 4 to 5 hours until the vegetables are tender and the sausage slices are cooked and tender.
At this point, add pasta to your taste and continue cooking for 15 to 20 minutes or until pasta is cooked. I used orzo, so only had to wait about 15 minutes. Rotini or elbows would probably take 20 minutes or so. If you choose to use the tortellini, you need to cook it first, then stir into the soup and cook for about 30 minutes or so. Yield: 10-12 servings.
Banana Sour Cream Cake
I'm always on the look out for cakes made from cake mixes because they save me time in the kitchen. This recipe uses a yellow cake mix to make a lucious banana cake.
1 pkg. (2-layer size) yellow cake mix
3 eggs
1 cup mashed ripe bananas (about 3 bananas)
1 cup sour cream, regular, reduced fat or light
1/4 cup oil
1 pkg. (8 oz.) cream cheese, softened
1/2 cup (1 stick) butter, softened
1 pkg. (16 oz.) powdered sugar (about 4 cups)
1 teaspoon Watkins Vanilla
1 cup walnut pieces, finely chopped
Preheat oven to 350 degrees F. Grease and flour 13x9-inch baking pan or two 9 inch-square pans; set aside. Beat cake mix, eggs, bananas, sour cream and oil in large bowl with electric mixer on low speed just until moistened, stopping frequently to scrape bottom and side of bowl. Beat on medium speed 2 min. Pour into prepared pan(s).
Bake 30-35 minutes or until wooden toothpick inserted in center comes out clean. Cool completely.
Frosting
Beat cream cheese and butter in large bowl with electric mixer on medium speed until well blended. Gradually add sugar, beating well after each addition.
Remove cake from pan; cut crosswise in half if using a 9x13-inch baking pan. Place one cake half, top-side down, on large serving plate; spread top with frosting. Top with remaining cake half, top side up. Frost top and sides of cake with remaiing frosting. Carefully press walnuts into frosting on sides of cake. Store in refrigerator.
I used 1/4 cup of butter and 4 oz. of cream cheese and the frosting is still very rich tasting.
Can anyone tell me how to put chopped nuts on the sides of a cake? I used my hand and part of the nuts fell on the plate and I had frosting all over my fingers!
Crock Pot Pumpkin Butter
This recipe is from Diary of a Stay at Home Mom a blog by Sandra. If you like Pumpkin Butter and don't want to make your own, Watkins Pumpkin Butter (#05624) is included in our 2007 Holiday Gifts and Entertaining Products available now through December. Watkins Pumpkin Butter has homemade taste with a rich sweet flavor. Spread on bread, toast, bagel, Watkins Good Tastings Bread, or quck bread.
5 lb pumpkin gutted and quartered
2 c. sugar
2 tbsp Watkins Cinnamon
1/2 tsp. Watkins Allspice
1/2 tsp Watkins Nutmeg
Quarter pumpkin. Remove 'guts', seeds, and stem (leave skin on). Place pumpkin and 2 cups water in your crock pot. Cook 4 hours on low.
Scoop pulp out of pumpkin skin. Mash with potato masher. Add sugar and spices to mashed pumpkin. Cook down 6-8 hours on low setting. Spoon into jars.
This recipe is made as a refrigerator butter. If you wish to preserve pumpkin butter for shelf storage, use a standard hot water bath canning method. Great on home made breads, or stirred into plain yougurt.
Maple Apple Pie
Filling
1- 9in. uncooked pie shell
5 cups sliced apples
1/2 cup sugar
2 tbsp. flour
1/2 tsp. Watkins Cinnamon
dash of Watkins Nutmeg or use 1/2 teaspoon Watkins Apple Bake Seasoning instead of the Cinnamon and the Nutmeg
1/3 cup maple syrup
1/3 cup sour cream
Crumble
1 cup all purpose flour
1/2 cup melted butter
1/2 cup soft brown sugar
1 teaspoon Watkins Cinnamon
Combine dry ingredients and sprinkle 2 tbsp. of it over bottom of piecrust. Add the rest to apples, along with maple syrup and sour cream and stir. Turn into pie and cover with crumble topping.
Bake at 425 for 15 minutes, then bake at 325 for 45 minutes longer or until nicely browned. Remove from oven and cool. Yield: 1- 9 in. pie

BIRD WATCHING
Too Many Backyard Friends!
I bought a birdseed feeding pole that has arms to hold several bird feeders. It has spikes on the bottom that stick in the ground. Previously I had my bird feeders hanging from the overhead beams of our deck. I enjoy feeding and watching the birds but part of our deck was always covered with shells from the bird seed. Now our deck looks much cleaner.
Now my problem is that we have attracted other animals besides birds. Some of our backyard visitors are raccoons, skunks, mice, rats, and wild turkeys. I know, turkeys are birds but they swoop in and eat all the birdseed before the smaller birds so I shoo them away when I see them in the yard. A few nights ago I looked out and we had two skunks scratching around under the bird feeders. Skunks and raccoons are nocturnal and usually only come out at night. Once I saw a shink scurry through our yard during the day. I think they have taken up residence under our deck. All we need is a bunch of baby skunks!
Does anyone know how to discourage skunks and get them to leave your yard? I read an article that said to place rags covered with ammonia at the opening of their den. I'm using that suggestion and hope it works!. If you have any other suggestions, please email them to me. I'd appreciate your input.
