How to Make Pie Crust Cookies – Use your pie crust scraps
Make any type of pie crust dough into your own cookies.
Here’s what to do:
Gather all of your pie crust scraps up into a ball.
Roll them out like you would a cut-out cookie. (You may need to chill the dough slightly before rolling.)
Brush each cookie with a little melted butter, and sprinkle with cinnamon sugar.
Bake at 350 degrees F, until cookies are lightly golden at the edges.
Pumpkin Pancakes
2 cups all-purpose flour
2 tablespoons packed brown sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon Watkins Ground Cinnamon
1/4 teaspoon Watkins Ground Nutmeg
1/4 teaspoon Watkins Ground Ginger
1 3/4 cups milk
1/2 cup canned pumpkin
2 eggs
2 tablespoons vegetable oil
Maple syrup
In a large bowl combine flour, brown sugar, baking powder, salt, cinnamon, nutmeg, and ginger. In a small bowl stir together milk, pumpkin, eggs, and oil. Add pumpkin mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy).
For each pancake, pour about 1/4 cup of the batter onto a hot, lightly greased griddle or heavy skillet. Spread batter, if necessary. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown, turning to second sides when surfaces are bubbly and edges are slightly dry. Serve warm. If desired, serve with maple syrup.
Herb Cider Chicken with Bacon
4 pieces bacon, diced
1 teaspoon olive oil
4 boneless skinless chicken breast halves or 6-8 boneless skinless chicken thighs (about 1-1/2 pounds total weight)
1/4 teaspoon Watkins Salt, more or less to taste
1/4 teaspoon Watkins Black Pepper, more or less to taste
1/2 teaspoon Watkins Paprika
1/2 a medium yellow onion, diced
1/3 teaspoon Watkins Thyme
1/3 teaspoon Watkins Sage
1/3 teaspoon Watkins Rosemary
2 tablespoon unbleached all-purpose flour
3/4 cup Chicken Broth made with 3/4 cup boiling water and 2 teaspoons Watkins Chicken Soup and Gravy Base
1-1/4 cup apple cider (NOT vinegar)

To a large, deep-sided skillet add a teaspoon of olive oil and the diced bacon. Heat on medium-low, stir and cook the bacon until crispy. About 8 to 10 minutes. Use a slotted spoon to transfer the crisp bacon pieces to a paper towel lined plate.
Meanwhile, increase the heat under the pan to medium. I prefer to cut my chicken breasts in half horizontally. Season the chicken with salt, pepper and paprika. Place the chicken in the heated pan and cook 6 to 7 minutes or until golden brown and fully cooked. Transfer the chicken to a clean plate and cover with foil to keep warm.
Reduce the heat to medium-low. In the same skillet, add the diced onion with a pinch of salt. Stir and cook until the onions are soft and translucent. About 6 minutes. Next add in the thyme, sage and rosemary. Stir and cook for about a minute.
Sprinkle in the flour and stir until absorbed into the fat. Cook the flour for 1 to 2 minutes. Continue to stir while slowly pouring in the apple cider and chicken broth. Simmer to thicken.
Taste and season the gravy with salt (to your preferred taste) before adding the chicken back in. Also add in any juices that have accumulated on the plate. Simmer until the gravy is thick and the chicken is heated throughout.
Spoon the thickened cider gravy over top of the chicken and sprinkle the crispy bacon pieces and parsley over top. Serve with mashed potatoes, noodles, or rice.

Chestnut-Backed Chickadees at Feeder in our Backyard
I stopped feeding my backyard birds for several months because we had a rodent problem. I recently filled my feeders again and several young Chestnut-backed Chickadees found the feeders. One day I had seven or eight little chickadees eating seeds. It was fun watching the cheery little birds flying around my feeders.
