Slow Cooker Turkey with Stuffing
Throw all of the ingredients in the slow cooker, and then just let the slow cooker do all the work! So much simpler than a complete turkey dinner. Make for Thanksgiving or for a delicious weekend dinner.

1 (12 oz.) package herb seasoned stuffing
1/2 onion, chopped
2 celery ribs, chopped
1 cup dried cranberries (optional)
1 cup chicken broth made with 2 teaspoons Watkins Chicken Soup and Gravy Base and one cup boiling water
3 Tbsp. melted butter
1 (3 pound) boneless turkey breast (If frozen, thaw)
1/4 tsp. salt
1/2 tsp. Watkins Black Pepper
1/4 tsp. Watkins Thyme
1 package Watkins Turkey Gravy Mix

Spray the inside of a 4 quart crock pot with cooking spray. Add the stuffing mix, onion, celery, and cranberries.

Combine the chicken broth and butter and pour over the stuffing and stir gently.

Remove any string from the turkey and rinse it well, checking for pin feathers. Place the turkey breast on top of the stuffing. Sprinkle the salt, pepper and thyme over the turkey. Cover and cook on high 1 hour. Reduce to low and cook for 4-5 hours or until a meat thermometer inserted in turkey reads 170 degrees F.

Remove turkey from pot and let rest for 10 minutes.

Cook the turkey gravy mix according to package directions.

Carve turkey breast and place on serving plate.

Stir stuffing slightly to mix and spoon into serving dish. Serve turkey and stuffing with turkey gravy. Serves 4-6.

Kentucky Bourbon Pie
1/2 (14.1-oz.) pkg. refrigerated piecrusts or homemade pie crust
1 1/2 cups chopped pecans
1 cup miniature semisweet chocolate chips
1 cup light corn syrup
1/2 cup granulated sugar
1/2 cup packed light brown sugar
4 large eggs, lightly beaten
1/4 cup (2 oz.) unsalted butter, melted
2 tablespoons all-purpose flour
2 tablespoons (1 oz.) bourbon
2 teaspoons Watkins Baking Vanilla Extract
1/2 teaspoon table salt
Whipped cream and chocolate shavings

Preheat oven to 325 degrees F. Place piecrust into a 9-inch pie plate; crimp edges. Sprinkle pecans and chocolate chips evenly over piecrust.

Whisk together corn syrup, granulated sugar, and brown sugar in a saucepan. Bring to a boil over medium-high; boil, whisking occasionally, until sugars are dissolved, about 5 minutes.

Whisk together eggs, butter, flour, bourbon, vanilla, and salt in a heatproof bowl. Slowly pour 1/3 cup of the hot corn syrup mixture into egg mixture, whisking constantly until fully incorporated. Whisk in remaining hot corn syrup mixture until smooth. Pour filling over pecans and chocolate chips in piecrust.

Bake in preheated oven until pie edges are golden brown, but pie center is still slightly jiggly, 45 to 50 minutes. Transfer to a wire rack; let cool completely to room temperature, about 2 hours. Slice and garnish with whipped cream and chocolate shavings.

I stopped feeding my backyard birds for several months because we had a rodent problem. I recently filled my feeders again and several young Chestnut-backed Chickadees found the feeders. One day I had seven or eight little chickadees eating seeds. It was fun watching the cheery little birds flying around my feeders.
