1-1/2 teaspoons Watkins Lemon Pepper Grinder (#00537)
1-1/2 teaspoons Watkins Chili Powder (#00602)

3/4 pound boneless skinless chicken breasts, cut into 1-inch pieces
4 cups torn mixed salad greens
2/3 cup canned black beans, rinsed and drained
1/4 cup thinly sliced red onion
1 small tomato, sliced
1/2 cup shredded cheddar cheese
Tortilla chips, salsa and ranch salad dressing

In a large resealable plastic bag, combine the seasonings. Add chicken, a few pieces at a time, and shake to coat. Place chicken on a greased broiler pan. Broil 3-4 inches from the heat for 3-4 minutes on each side or no longer pink. On two plates, arrange the salad greens, black beans, onion and tomato. Top with chicken and cheese. Serve with tortilla chips, salsa and ranch dressing. Yields 2 servings.

Meringue Shells
Meringue shells are sweet, light, and crisp. They make a lovely dessert for Mother's Day, a baby shower, or a spring party. They make the perfect base for ice cream topped with fresh fruit or chocolate sauce or pudding or pie filling topped with whipped cream.

3 egg whites, at room temperature
1/2 teaspoon Watkins Cream of Tartar (#00637)
3/4 cup sugar
1/2 teaspoon Watkins Vanilla Extract (#01008 or 01007) or Watkins Almond Extract (#01009 or #60391)
Berries of your choice (I add a little bit of sugar to sweeten the berries or other fruit)
Vanilla ice cream and whipped cream

Place egg whites in mixer bowl. Add vanilla or almond extract and cream of tartar; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved.

Drop eight mounds onto parchment paper-lined baking sheet or baking sheet lined with lightly greased foil. Shape into 3-inch cups with the back of a spoon. Bake at 225 degrees F for 1 to 1-1/2 hours or until set and dry. Turn oven off; leave meringues in oven for 1 hour. Plain meringues should remain white. If you bake at too high a temperature or for too long the meringues will begin to brown.

Cool on wire racks. Store in an airtight container so that they don't absorb moisture from the air. Fill shells with ice cream; garnish with fresh fruit or whipped cream. Yields 8 servings. Serve with ice cream, whipped cream, berries, or other fruit.

Variations

• Add food coloring and a different flavored extract for a variation, such as make pink meringues by adding a few drops of red food coloring and using cherry, raspberry, or strawberry extract.
• Fill meringues with a mixture of pudding and cool whip.
• Fill meringues with fruit and top with whipped cream or whipped topping.
• Make one large meringue and fill with ice cream, fruit, or pie filling.
• Make small meringues in the shape of cookies (Drop by teaspoon fulls or use a pastry bag with a large star tip. Small cookies bake for a shorter period of time.)

Cherry Almond Poke Cake
This yummy and colorful cake is great for Mother's Day or a spring party.

1 white cake mix
Ingredients on cake mix box
1 teaspoon Watkins Almond Extract (#01009 11 fl oz or #60391 Pure Almond 2 fl oz)
1 small box Cherry Jell-O
1 cup boiling water
1/2 cup cold water

Frosting
1 8 oz. tub Cool Whip frozen whipped topping, thawed
1/2 cup Marshmallow Fluff
1 teaspoon Watkins Almond Extract (#01009 or #60391)

Topping
1/2 cup sliced almonds

1. Preheat oven to 350 degrees F and coat a 13x9-inch baking dish with cooking spray and dust with flour.
2. Combine cake mix, eggs, water, oil and almond extract until smooth.
3. Spread evenly into baking dish, bake for about 25 minutes or until a toothpick inserted in the center comes out clean
4. Remove from oven and let cool for 15 minutes.
5. Combine Jell-O and boiling water and stir about 2 minutes until dissolved; add cold water.
6. Using a wooden skewer or large fork, poke holes into cake about every 1/2 inch.
7. Carefully pour Jell-O over the cake.
8. Place in refrigerator at least 3 hours or overnight

Frosting

1. In a mixing bowl, combine all ingredients and mix until fluffy
2. Spread over cake and sprinkle with almonds
3. Store in fridge until ready to serve
4. Store leftovers in fridge covered with plastic wrap
