Chicken Pasta Salad
I made this salad and it is delicious. However, I prefer the salad without the Italian Seasoning. The seasoning is overpowering and I added only a small amount and not the 3 teaspoons. You may like the salad with the Italian Seasoning but I recommend you make the salad with all ingredients except the seasoning and then take out a small amount of salad and mix in a little seasoning to see if you like the flavor. Some flavors seem stronger to me than when other people taste the same recipe. I don't want you to ruin your salad with too much Italian Seasoning. This recipe makes a large salad, enough for 10-12 servings.

Dressing
1/2 Cup Mayonnaise
1/3 Cup Water
Juice of 2 Lemons
Zest of 1 Lemon
3 Teaspoons Watkins Organic Italian Seasoning
1 Teaspoon Watkins Organic Ground Mustard
1 1/2 Teaspoons Salt
1/4 Teaspoon Watkins Black Pepper
1/3 Cup, Plus More As Needed Olive Oil

Salad
1 Bunch Asparagus, Trimmed And Cut Into 2 Inch Pieces
1/4 Cup Green Onions, Thinly Sliced
1 Red Bell Pepper, Julienned
1/3 Cup Sun Dried Tomatoes In Oil, Drained (Not Rinsed) and Julienned
1/2 Cup Parmesan Cheese, Shredded
1 Bunch Basil, Julienned
1 Bunch Chives, Finely Chopped
4 Cups Cooked Chicken, Cut Into 1/2 Inch Cubes
16 Ounces Farfalle Pasta or your favorite pasta, Cooked According To Package Instructions, And Drained

In a small bowl, whisk all ingredients together until dressing is well combined and smooth.

In a large skillet bring one inch of water to a boil. Add asparagus pieces and cook about 3 minutes, or until still a little crunchy. Drain and rinse with cold water. Cool to room temperature.

In a large bowl combine all ingredients and add dressing and toss well. Chill for 4 hours. Toss salad. Add 2-4 Tablespoons of olive oil, as needed, if dressing has absorbed into the pasta. Serves 12.

Note
You can make a substitute for sun dried tomatoes by thickly slicing (1/4-inch slices) roma tomatoes. Place slices on a baking sheet covered with parchment paper or coated with oil and bake in pre-heated oven at 225 degree F oven. Blot slices to remove excess water before baking

Bake for one hour, then turn off the oven (do not open door) and allow the tomatoes to sit overnight in the warmth of the oven. Cut dried tomatoes in long pieces. Sprinkle with olive oil and use in recipe.

Store extra dried tomatoes in olive oil in the refrigerator.

I stopped feeding my backyard birds for several months because we had a rodent problem. I recently filled my feeders again and several young Chestnut-backed Chickadees found the feeders. One day I had seven or eight little chickadees eating seeds. It was fun watching the cheery little birds flying around my feeders.
