COOKING TIPS
Cooking Long Grain White Rice - Basic Recipe
As a general rule, cook 1/3 to 1/2 cup (80 to 125 ml) uncooked rice per serving, and always use a ratio of two parts water (by volume) to one part rice. (Proportions of 1 cup uncooked rice with 2 cups water) Bring the water to a boil in a heavy saucepan and add the rice. Stir once, cover tightly, and reduce the heat to low. Simmer covered for 15 minutes - do not stir or remove the lid. Remove from the heat and allow to sit covered for 10 to 15 minutes. Fluff with a fork immediately prior to serving.
How to Cook Spaghetti
When you cook spaghetti use plenty of water in a large pot. Add spaghetti and stir often until the water returns to a boil. Use at least 4 quarts (4 L) of water per pound of dried pasta - 5 or 6 quarts will deliver even better results. Stirring the pasta every 30 seconds or so until the water returns to the boil will help prevent the pasta from sticking to itself. Once the water returns to a boil, reduce the heat but maintain the water at a vigorous boil. This activity of the bubbles will have the effect of "stirring" the pasta. If the pot boils over, then your pot isn't big enough.
Once spaghetti is cooked, drain (don't rinse) and serve immediately with sauce. The sauce sticks to the spaghetti better if you don't rinse. If you are not serving the spaghetti immediately rinse in colander under warm running water so spaghetti does not stick together, making it difficult to serve at a later time.
RECIPES
Ravioli and Vegetable Soup
Fresh or frozen ravioli cook in minutes and turn this light vegetable soup into a main course. Look for whole-wheat or whole-grain ravioli in the refrigerated or frozen section of the supermarket. Tortellini can be used instead of ravioli.
1 tablespoon extra-virgin olive oil
2 cups frozen bell pepper and onion mix, thawed and diced
2 cloves garlic, minced
1/4 teaspoon Watkins Red Pepper (crushed), or to taste
1 28-ounce can crushed tomatoes, preferably fire-roasted
2 cups chicken broth made with 2 cups boiling water and 1 tablespoon Watkins Chicken Soup Base
1 1/2 cups hot water
1 teaspoon Watkins Basil or Watkins Marjoram
1 6- to 9-ounce package fresh or frozen cheese (or meat) ravioli, preferably whole-wheat
2 cups diced zucchini (about 2 medium)
Watkins Black Pepper to taste
Heat oil in a large saucepan or Dutch oven over medium heat. Add pepper-onion mix, garlic and crushed red pepper and cook, stirring, for 1 minute. Add tomatoes, broth, water and basil or marjoram; bring to a rolling boil over high heat. Add ravioli and cook for 3 minutes less than the package directions. Add zucchini; return to a boil. Cook until the zucchini is crisp-tender, about 3 minutes. Season with pepper. Serves 4. Soup may be refrigerated for up to 3 days.
Hearty Vegetable Salad with Avocado Yogurt Dressing
4 cups torn fresh spinach or combination of fresh spinach and romaine lettuce
1 can (15 ounces) garbanzo beans, drained
1 cup cherry tomatoes, halved
1 cup cauliflower florets
1 cup sliced fresh mushrooms
1 small cucumber, sliced
1/2 small red onion, thinly sliced and separated into rings
1/2 cup coarsely chopped walnuts
1 small avocado, peeled, seeded, and cut up
1 carton (8 ounces) plain yogurt
1/4 cup milk
1 tablespoon honey
1/2 teaspoon Watkins Garlic Sea Salt from Grinder
Milk
In a large mixing bowl, combine spinach, romaine lettuce, garbanzo beans, tomatoes, cauliflower, mushrooms, cucumber, onion rings, and walnuts. Cover and chill.
For dressing, in blender container or food processor bowl combine avocado, yogurt, 1/4 cup milk, honey, and garlic salt. Cover and blend or process until smooth. If necessary, stir in additional milk until of desired consistency. Cover and chill.
Just before serving, pour dressing over vegetable mixture; toss gently to coat. Serves 4.
Cocktail Meatballs
1 1/2 lbs ground beef (or a mixture of 1 pound ground beef and 1/2 pound ground pork)
1 large egg, slightly beaten
1/2 cup grated Parmesan cheese
1/3 cup breadcrumbs
1 teaspoon Watkins Garlic Powder
1/2 teaspoon salt
1 teaspoon Watkins Black Pepper
1/3 cup milk (can use up to 1/2 cup milk)
1 teaspoon Watkins Steak & Chop Seasoning from Grinder
1 tablespoon Watkins Parsley
Watkins Gourmet Original Barbecue Sauce
Mix all ingredients together in a large bowl. Shape into small meatballs. At this point cook meatballs or place on a jelly-roll/baking sheet and freeze to use later, or cover with plastic wrap and refrigerate up to 24 hours before using.
Bake the meatballs in oven at 350 degrees F for 25 minutes or until cooked through or cook in skillet over medium heat turning to cook all sides and meat is cooked through.
Place the meatballs in simmering pasta sauce or Watkins Barbecue Sauce. Continue cooking in the simmering sauce for 20 minutes. Keep warm until ready to serve.
Banana Snack Cake
Cake
2 2/3 cups Original Bisquick mix
1 1/2 cups mashed ripe bananas (I used about 3 1/2 medium-sized ripe bananas)
3/4 cup granulated sugar
1/3 cup butter, melted
2 teaspoons Watkins Vanilla Extract
3 eggs
1 teaspoon Watkins Cinnamon
3/4 cup chopped toasted pecans
Glaze
2 tablespoons butter, melted
1 cup powdered sugar
1/2 teaspoon Watkins Banana Extract or Watkins Vanilla Extract
2 teaspoons hot water
- Spray a 9x13-inch baking dish with cooking spray or grease. Coat lightly with flour.
- In large bowl, stir bananas, granulated sugar, 1/3 cup melted butter, the vanilla and eggs until well blended. Stir in Bisquick mix, cinnamon and 1/2 cup of the pecans until well blended. Pour into prepared baking dish.
- Bake at 350 for 25-30 minutes or until toothpick inserted in cake comes out clean.
- Cool cake.
- In small bowl, mix glaze ingredients until smooth and consistency of thick syrup. Drizzle over top of cake. Sprinkle with 1/4 cup chopped pecans.
BIRD WATCHING
Dark-Eyed Junco Nest
Dark-Eyed Juncos inhabit our backyard year round here in northern California. For the past two weeks every time I went out our sliding glass door to the backyard a Junco would fly around and up into a tree chirping, chirping, chirping. Often another Junco would also fly nearby. I was trying to figure out why the Junco was near our back door everyday. I knew that birds often fly around and chirp to attract attention away from a nest or babies but I didn't see any nests.
Well, guess what? I finally found a little nest in the boxwood bush by our back door. The nest is on the back side of the bush and concealed from sight. There are four little speckled eggs in the nest. I hope to get a photo of the baby birds!
