RECIPES
Oven Roasted Potatoes
6 russet potatoes, peeled and cut into bite sized pieces
2-3 Tbsp. olive oil
1/2 tsp. Watkins Onion Powder
1 tsp. Watkins Garlic Powder
1 tsp. Watkins Oregano
1 tsp. Watkins Paprika
1 tsp. Watkins Sea Salt from Grinder
Sprinkle Watkins Black Pepper, to taste
- Place potatoes in a gallon sized ziploc bag or large bowl.
- Sprinkle with remaining ingredients; shake or stir to mix.
- Spread potatoes on a 15x10 inch pan.
- Bake uncovered at 400 degrees F for 30 to 40 minutes, stirring occasionally, until crisp and golden.
Serves 6.
Cheesy Chicken, Broccoli, and Rice
Broccoli is one of the few vegetables my whole family loves so I knew it would be a hit.
3 tablespoons extra virgin olive oil
1/2 medium yellow onion, diced finely
1 pound boneless skinless chicken breasts, cut into bite sized pieces
2 cloves of garlic, minced
1 teaspoon of kosher salt and freshly ground Watkins Black Pepper from Grinder, to taste
1 cup uncooked extra long grain white rice
2 1/2 cups broccoli florets, cut into bite sized pieces
2 1/2 cups of low-sodium chicken broth made with 2 1/2 cups boiling water and 1 1/2 tablespoons Watkins Chicken Soup Base
2 cups shredded extra sharp cheddar cheese
- In a large skillet or pan, saute onions in two tablespoons of olive oil over medium heat. Season chicken with salt and pepper.
- Once onions soften, increase the heat to medium high and add chicken to the pan.
- Brown the chicken pieces and add the garlic. Cook for about 1 more minute.
- Push chicken to one side of the pan and add additional tablespoon of olive oil to other side.
- Add the uncooked rice in the olive oil and saute it for a couple of minutes.
- Add the chicken broth to the pan and bring the mixture to a boil. Lower the heat to a simmer and cover the pan with a lid.
- Cook chicken and rice mixture covered for about 12 minutes.
- Sprinkle the broccoli evenly over the chicken and rice mixture and stir to combine.
- Continue to cook covered another 8 minutes on low, or until broccoli and rice are both tender.
- Remove from heat and stir in half a cup of cheese.
- Sprinkle remaining cheese on top and cover with a lid, letting it sit for 1-2 minutes or until cheese has melted.
Yields 4-6 servings.
You need a large skillet or pan with a higher edge for this dish to hold everything. A 12-inch skillet with a slightly raised edge should work well.
Blueberry Cake with Lemon Glaze
Cake Batter
2 large eggs separated, (separate whites from yolks) set aside
1 cup white sugar ( 1/4 cup will be used for the egg whites)
1/2 cup butter, room temperature
1/4 teaspoon Watkins Sea Salt from Grinder
1 teaspoon Watkins Double-Strength Vanilla
1 1/2 cups all purpose flour, sifted
1 tablespoon all purpose flour ( to coat berries with)
1 teaspoon baking powder
1/3 cup milk
1 1/2 cups blueberries ( fresh or frozen unthawed)
Lemon Glaze
2 tablespoons lemon juice
1 cup confectioners sugar
Mix the lemon juice and confectioners sugar together, drizzle over top of baked cake while warm ( not hot) or serve on the side.
Cake Directions
Oven 350 degrees F. Grease an 8×8 inch baking pan with shortening.
Beat egg whites in a large bowl until stiff peaks form, with mixer still beating, sprinkle 1/4 cup sugar over the egg whites, beat until incorporated. Set aside.
In another large bowl, cream the butter, add the salt, vanilla and remaining sugar (3/4 cup). Beat until well mixed. Add egg yolks and beat until creamy.
In a medium size bowl, sift flour and baking powder together. Beat the sifted flour alternately with the milk into the creamed mixture. Always starting with flour and ending with flour ( add 1/3 of the flour, then half of the milk, another 1/3 of the flour, and the rest of the milk, ending with the remaining 1/3 of flour) Beating until just incorporated with each addition.
Fold the beaten egg whites into the cake batter. Coat the berries with the one tablespoon of flour and fold berries into batter.
Pour batter into prepared pan. Smooth batter to edges of baking pan. Bake 45 to 50 minutes, testing with toothpick for doneness. Start checking cake at 40 minutes. Cool on baking rack, drizzle with Lemon Glaze.
BIRD WATCHING
Cedar Waxwings in our Backyard
The Cedar Waxwings arrived last Thursday morning to eat the berries from our privet tree in the backyard. There is usually a large flock that attacks the tree and devours the berries in less than a day and then disappears for another year. The Cedar Waxwings usually decend on our backyard in December or January.
This year the flock was small and the Cedar Waxwings were accompanied by a large flock of American Robins. I've never seen so many robins in our yard. I took a lot of photos but none of them were closeups so the pictures are not distinct.
It always amazes me that the waxwings find our yard each winter and stop for a meal!
The Juncos are back with a new nest in our boxwood bush this year! The Junco pair built a nest and laid four eggs. See photos at Junco Nest, Eggs, and Hatchlings
The Great Backyard Bird Count for 2014 is Friday February 14 through Monday February 17. The Great Backyard Bird Count is an annual four-day event that engages bird watchers of all ages in counting birds to create a real-time snapshot of where the birds live.
