Valentine's Day Cooking Ideas
- Use heart-shaped metal molds to cook fried eggs or pancakes.
- Use heart-shaped cookie cutter to cut bread for heart-shaped French toast.
- Add a little Watkins Vanilla to your favorite cup of hot chocolate.
- Make heart-shaped sugar cookies
- Make a heart-shaped cake using a square baking pan and a round baking pan. Remove
baked cake layers from pans. Cool. Place square cake layer on a plate as a diamond shape. Cut round cake layer in half and place halves at top sides of diamond. Frost and decorate.
RECIPES
Chocolate Rum Sauce
This Chocolate Rum Sauce when warm is thin enough for dipping fruit and other foods and for pouring over ice cream. The sauce thickens as it cools but does not harden.
1/2 cup heavy cream
2 Tbsp. sugar
1 tsp. Watkins Ground Cinnamon (optional)
1 Tbsp. butter
4 oz. semisweet chocolate (I used chocolate chips)
1/2 tsp. Watkins Rum Extract
1/8 tsp. grated orange zest
For Dipping
1 pint fresh strawberries
1 pint fresh raspberries
2 bananas, peeled, cut into 2 to 2 1/2-inch slices
Salted pretzels
Pound cake cubes
In a medium saucepan over low heat, bring the cream, sugar, cinnamon, and butter to a rolling boil. Remove from heat, add the chocolate and stir until the chocolate melts. Add the rum extract and stir in the ornage zest before serving. Arrange fruit on a platter. Serve with warm chocolate rum sauce. Makes about 3/4 cup of sauce.
Suggestions
Substitute Watkins Orange Extract or Watkins Raspberry Extract for the Rum Extract and omit the cinnamon.
Pour over vanilla ice cream for a delicious topping.
Creamy Ranch-Style Dip
4 ounces 1/3-less-fat cream cheese, softened
3 tablespoons nonfat buttermilk
1 1/2 teaspoons Watkins Parsley
1/2 teaspoon Watkins Dill
1/2 teaspoon minced fresh garlic or 1/4 teaspoon Watkins Garlic Powder
1/4 teaspoon Watkins Onion Powder
1/4 teaspoon salt
1/4 teaspoon Watkins Black Pepper
Combine cream cheese and buttermilk in a small bowl, stirring with a whisk until blended. Add additional buttermilk if needed for desired dipping consistency. Stir in remaining ingredients and chill for a least 30 minutes to allow flavors to blend. Serve with fresh vegetables or chips.
Sweet-and-Sour Chicken Wings
These chicken wings, sweetly glazed with pineapple juice, ketchup and soy sauce, are the perfect appetizers to serve at parties and potlucks.
2 1/2 pounds chicken wings (12 to 15 wings)
1/2 cup all-purpose flour
1/4 teaspoon Watkins Garlic Salt from Watkins Garlic Sea Salt Grinder
1/4 teaspoon Watkins Lemon Pepper from Watkins Lemon Pepper Grinder
3 tablespoons cooking oil
3/4 cup sugar
1/2 cup vinegar
1/4 cup unsweetened pineapple juice
1/4 cup catsup
1 teaspoon soy sauce
- Cut off and discard wing tips from chicken wings. Cut each wing at joint to make 2 sections or purchase wings already separated.
- In a shallow dish, combine flour, garlic salt, and lemon pepper; coat chicken pieces with flour mixture.
- Heat oil in a 12-inch skillet; add coated chicken pieces and cook until browned, turning occasionally.
- Remove chicken from skillet and arrange pieces in a shallow baking dish.
- In a medium saucepan, combine sugar, vinegar, pineapple juice, catsup, and soy sauce; heat to boiling, stirring to dissolve sugar. Pour over chicken.
- Bake, uncovered, in a 350 degree F oven about 30 minutes or until chicken is no longer pink, turning pieces over after 15 minutes. Makes 24 to 30 pieces.
Braised Brisket and Vegetables
Brisket is a cut of meat from the lower chest of beef or veal containing a significant amount of connective tissue. The roast must be cooked correctly to tenderize the connective tissue and the meat. When cooked properly the meat will practically melt in your mouth.
1 tablespoon canola oil
1 3-pound piece beef brisket, trimmed
1 teaspoon Watkins Garlic Powder
Kosher salt and Watkins Black Pepper
1 pound carrots, peeled, cut into 2-inch pieces, and halved lengthwise if thick
1 pound parsnips, peeled, cut into 2-inch pieces, and halved lengthwise if thick
1 large onion, peeled and cut into wedges, stem ends left intact
1/4 cup tomato paste
5 cups chicken broth or beef broth made with 5 cups boiling water and 3 tablespoons Watkins Chicken or Beef Soup Base
1/4 cup cider vinegar
2 tablespoons Worcestershire sauce
1 packet of Watkins Brown Gravy Mix
- Heat oven to 350 degrees F. Heat the oil in a 5- to 6-quart oven-proof Dutch oven over medium-high heat. Season the brisket with the garlic powder, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the brisket to the Dutch oven and cook until browned, 3 to 4 minutes per side; transfer to a plate.
- Add the carrots, parsnips, onion, and 1/2 teaspoon each salt and pepper to the Dutch oven and cook, stirring occasionally, until the vegetables begin to soften, 5 to 7 minutes. Mix in the tomato paste. Add the broth, vinegar, Worcestershire, and brown gravy mix and stir to combine.
- Nestle the brisket in the vegetables and bring to a boil; cover and transfer to oven. Cook until the brisket is tender, 3 to 3 1/2 hours. Let rest for at least 10 minutes before slicing.
- Serve the brisket and vegetables with the cooking liquid or remove meat and vegetables and thicken cooking liquid to make sauce or gravy.
Chocolate Lovers Cheesecake
Make personal size cheesecakes of this no-bake recipe for a fast and delicious Valentine's Day dessert.
1 1/2 cups semi-sweet chocolate chips
11 ounces cream cheese, softened
1/3 cup sugar
1/4 cup butter, room temperature
1 1/2 teaspoons Watkins Original Double Strength Vanilla or Watkins Pure Vanilla
1 cup heavy cream
4 ounces dark or semisweet chocolate
2 tablespoons water
1/2 cup heavy cream
2 tablespoons powdered sugar
1/2 teaspoon Watkins Original Double Strength Vanilla or Watkins Pure Vanilla
- Melt chocolate chips in top of a double boiler over low heat. Stir until melted. Combine cream cheese and butter in the bowl of an electric mixer with the paddle attachment until fluffy and smooth. Add sugar and vanilla and beat well, scraping down the sides. Add melted chocolate and beat to combine.
- In another bowl add the heavy cream and beat until stiff peaks form. Fold into the chocolate cream cheese mixture gently. Spoon mixture into an 8 or 9-inch springform mold or pan lined with aluminum foil. For individual cheesecakes use 2 1/2 inch cookie cutters set on a parchment lined baking sheet. Chill the cheesecakes for 1 to 2 hours. Invert onto a serving platter and remove the aluminum foil or remove cookie cutters.
- In a microwaveable dish add the dark chocolate and water and cook for 30 second intervals until the mixture is melted. Let cool slightly. Carefully pour over the top of the cheesecake and set aside.
- In another bowl whip the 1/2 cup heavy cream, powdered sugar, and vanilla and beat until stiff peaks form. Fill a pastry bag fitted with the tip of your choice. Pipe icing on the top of the cheesecake and serve immediately, or chill until ready to serve.
- Note: to make the swirled hearts melt semi-sweet chocolate and white chocolate separately, make a square of aluminum foil with folded up edges (so the chocolate won't run out) and then pour both kinds of chocolate into the foil and swirl with a knife. Allow to harden and then use a heart shaped cookie cutter and apply light pressure to cut out the shapes. They can break easily so go slowly.
Chewy Chocolate Chunk Cherry Cookies
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
3 sticks unsalted butter, room temperature
2 cups packed light-brown sugar
1 cup granulated sugar
4 large eggs
2 teaspoons Watkins Vanilla
12 ounces semisweet chocolate, coarsely chopped or chocolate chips(2 1/2 cups)
8 ounces dried cherries (1 1/2 cups)
Preheat oven to 375 degrees F. Whisk together flour, baking soda, and salt. Beat butter and sugars until pale and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla, then flour mixture. Mix in chocolate and cherries. Refrigerate dough for 1 hour.
Roll dough into balls and arrange on parchment-lined baking sheets, spacing about 2 inches apart. Bake until edges are golden, 10 to 14 minutes depending on the size of cookies. Let cool on baking sheets. Transfer cookies to racks; let cool completely.
