RECIPES
Heart-Shaped Pizza and Homemade Pizza Sauce for Valentine's Day
Homemade Pizza Sauce
1 6 oz can tomato paste
1 15 oz can tomato sauce
1-2 TBS Watkins Oregano to taste
2 TBS Watkins Italian Seasoning
1/2 tsp Wakins Garlic Powder
1/2 tsp Watkins Onion Powder
1/2 TBS Watkins Garlic Salt, from Garlic Sea Salt Grinder
1/4 tsp freshly ground Watkins Black Pepper, from Black Peppercorn Grinder
1 tsp sugar
Mix tomato paste and sauce together in a medium size bowl until well combined (all the lumps of paste are incorporated into the sauce).
Add the rest of the ingredients (oregano, Italian seasoning, garlic powder, onion powder, garlic salt, pepper and sugar) and mix well.
Use in your favorite pizza recipe! Store in refrigerator until ready to use.
Note
If you don’t have Garlic Sea Salt, use a little more garlic powder and regular sea salt.
Pizza
1 pound prepared pizza dough, from supermarket, grocery store, pizza parlor, or homemade
1 tablespoons extra-virgin olive oil, divided
1/4 cup pizza sauce
Several pepperoni slices (cut into heart shapes if desired)
1 1/2 c. shredded mozzarella
3 tbsp. grated parmesan cheese
Preheat oven to 450 degrees F. Line a pizza pan with parchment paper, set aside. Or use a pizza stone.
Fold each pepperoni in half and cut into heart shapes using kitchen shears. Place on a paper towel lined plate and microwave for 15 seconds on high. Dab any excess grease off, set aside.
Lightly flour a bread board or other flat surface. Roll dough and shape into a heart shape, about 16 inches tall.
Transfer pizza dough to prepared baking sheet. Brush with 1 tablespoon olive oil and prick the crust with a fork to prevent bubbles from forming.
Place in the oven and bake for 6 minutes. Remove and spoon pizza sauce over the surface of the crust, leaving a 1-inch crust border without any sauce. Then add cheeses and pepperoni and any other toppings you like.
Return to the oven and bake for 8-12 minutes or until the crust is golden brown and cheese is melted.
Remove from the oven. Let stand for 5 minutes before cutting. Serves 2.
This pizza is blind baked (sometimes called pre-baking), the process of baking a pie crust or other pastry/dough without the filling. Blind-baking the pizza crust helps to prevent the crust from becoming undercooked or soggy.
Red Velvet Cupcakes With Cream Cheese Frosting
1 2/3 cups Cake Flour
1/3 cup Butter
1 1/8 cups Sugar
2 Eggs
1 Tbsp Watkins Natural Red Food Coloring
1 1/2 Tbsp Unsweetened Cocoa Powder
3/4 tsp Watkins Vanilla Extract
3/4 tsp Salt
3/4 cup Milk
3/4 tsp White Vinegar
3/4 tsp Baking Soda
Cream Cheese Frosting
1/2 cup Butter
4 oz Cream Cheese
1 tsp Watkins Vanilla Extract
2 1/4 cups Powdered Sugar
1/2 Tbsp Milk, more if needed
Preheat oven to 350 degrees F. Line muffin tin with paper liners and spray lightly with non-stick cooking spray.
In a mixing bowl, add 1/3 cup butter and 1 1/8 cups sugar. Using an electric mixer, mix on medium speed until light and fluffy. Add eggs, one at a time, beating well with each addition.
In a different bowl, whisk food coloring, cocoa powder, and 3/4 teaspoon vanilla together. Add to previous mixture and stir until well mixed.
Add salt to 3/4 cup milk and stir. Add milk to batter in three parts, alternating with the cake flour. Start and end with flour.
In a small mixing bowl, add vinegar and baking soda together. Add mixture to batter and stir until mixed well.
Fill cupcake liners 2/3 full with batter. Bake for 15-20 minutes or until toothpick comes clean. Let cool completely.
In a large mixing bowl, add 1/2 cup butter, cream cheese, and 1 teaspoon vanilla and mix until smooth. Mix in powdered sugar, one cup at a time, with each addition mixed well. If frosting is too thick, add a little milk.
Frost cupcakes. Makes 18 cupcakes.
BIRD WATCHING
Chestnut-Backed Chickadees at Feeder in our Backyard
I stopped feeding my backyard birds for several months because we had a rodent problem. I recently filled my feeders again and several young Chestnut-backed Chickadees found the feeders. One day I had seven or eight little chickadees eating seeds. It was fun watching the cheery little birds flying around my feeders.
The Juncos are back with a new nest in our boxwood bush this year! The Junco pair built a nest and laid four eggs. See photos at Junco Nest, Eggs, and Hatchlings
