COOKING TIP

Make individual dessert cups. Mix your favorite sugar cookie recipe. (Or other favorite cookie recipe. Make chocolate flavored dessert cups by adding cocoa to sugar cookie recipe.) Roll cookie dough to 1/8 inch thickness. Cut with a 2 1/2-inch scalloped cutter. Press into muffin tin and bake. Cool. Then carefully remove from muffin tins. Fill each cookie dessert cup with sliced fruit, ice cream or frozen yogurt, pudding, or cheesecake. Top with whipped topping.

A Prescription For Living

If you want your heart to be healthy for the rest of your life, follow this prescription:

  1. Get plenty of exercise.

  2. Follow a good diet.

  3. Keep your heart clean and drug-free.

Your heart is the most important muscle in your body.

The normal heart is a strong, hard-working pump made of muscle tissue. It's about the size of a person's fist.

The heart has four chambers. The upper two chambers are the right artium and left atrium, and the lower two are the right ventricle and left ventricle. Blood is pumped through the chambers, aided by four heart valves. The valves open and close to let the blood flow in only one direction.

Dietary Guidelines for Healthy Children

The American Heart Association recommends these dietary guidelines for all healthy children and adolescents over the age of about 2 years:

  • Adequate nutrition should be achieved by eating a wide variety of foods.
  • Energy (calories) should be adequate to support growth and development and to reach or maintain desirable body weight.
The following pattern of nutrient intake is recommended:

  • Saturated fat — 7–10 percent of total calories
  • Total fat — an average of no more than 30 percent of total calories
  • Dietary cholesterol — less than 300 milligrams per day

Each of these numbers refers to an average of nutrient intake over several days.

The American Heart Association recommends this eating pattern for families:

  • Eat foods low in saturated fat, cholesterol and total fat.
  • Choose a variety of foods to get enough carbohydrates, protein and other nutrients.
  • Eat only enough calories to maintain a healthy weight for your height and build.

This eating pattern supports a child's normal growth and development. It provides enough total energy and meets or exceeds the recommended daily allowances for all nutrients for children and adolescents, including iron and calcium.

The guidelines aren't intended for infants from birth to 2 years of age. Their fast growth requires a higher percentage of calories from fat. Toddlers 2 and 3 years of age may safely be moved to the recommended eating pattern as they begin to eat with the family.

RECIPES

With Valentine's Day just around the corner I have to include some suggestions and recipes for Valentine's treats. I like to serve a dish, usually dessert, that has a red-colored food as an ingredient.

Cherries
Raspberries
Strawberries
Jello - Cherry, raspberry, strawberry
Red Peppers
Tomatoes
Apples

  • Make a heart-shaped cake or cheesecake and top it with cherries, raspberries, or strawberries.
  • Bake your favorite sugar cookies and cut the dough into heart shapes. After baking place some cherry, raspberry, or strawberry jelly or jam on one cookie. Top with another cookie and sprinkle with powdered sugar.
  • Make Jello in individual glasses or dishes; add a dab of whipped topping and a cherry. Or cool Jello in a 13 x 9 inch pan. When firm use a small heart-shaped cookie cutter to cut the Jello into tiny hearts. Or use a large heart-shaped cookie cutter to make larger hearts. Decorate with piped whipped cream or whipped topping.
  • Add sweet red peppers and tomatoes to your green salad.
  • Add thinly sliced unpeeled Red Delicious apples to your spinach salad.
  • Make a Waldorf Salad with unpeeled Red Delicious apples.
  • Serve spaghetti or lasagna.

Apple Spinach Salad

2 cups baby spinach leaves
1 medium unpeeled apple, thinly sliced
2 tablespoons chopped celery
2 tablespoons toasted pecans or walnuts, chopped
2 tablespoons reduced-fat Italian salad dressing
1/4 teaspoon Watkins Raspberry Extract

Mix salad dressing and raspberry extract. Toss ingredients with dressing in large bowl.
Makes 2 servings.

To toast nuts, spread in a single layer in shallow baking pan. Bake at 350 degrees F for 8 to 10 minutes, or until lightly toasted, stirring occasionally.

Risotto

1/2 cup chopped onion
4 teaspoons margarine or butter
1 cup Arborio rice
3 cups water
3/4 cup beef broth prepared from Watkins Beef Soup Base
3/4 cup frozen baby peas
1/4 cup grated Parmesan cheese
1/4 cup cubed mozzarella or Muenster cheese (1 ounce)
1 teaspoon Watkins Thyme and/or Watkins Parsley
Grated Parmesan cheese

  1. In a 2-quart saucepan cook onion in hot margarine or butter until onion is tender. Add the uncooked rice. Cook and stir over medium heat about 5 minutes or until the rice is lightly golden.
  2. Meanwhile, in another saucepan combine water and broth; bring to boiling. Reduce heat until mixture just simmers. Slowly and carefully add 1 cup of the broth mixture to the rice mixture, stirring constantly. Continue to cook and stir over medium heat until liquid is absorbed. Add another 1/2 cup of the broth mixture to the rice mixture, stirring constantly. Continue to cook and stir until liquid is absorbed. Add the remaining liquid, 1/2 cup at a time, stirring constantly until the liquid is absorbed and rice is just tender. (This will take about 25 minutes total.)
  3. Cook and stir until the rice is slightly creamy and kernels are tender. Stir in peas, the 1/4 cup Parmesan cheese, mozzarella or Muenster, and herbs; heat through. Serve immediately. Pass additional Parmesan cheese. Makes 6 to 8 side-dish servings or 4 main-dish.

When making risotto the question arises. "Why not add the broth all at once?" The answer is that the gradual addition of liquid controls the amount of starch that the rice releases. If you get impatient and dump the liquid in all at once, it will wind up as a concretelike mass by the time the rice is cooked. Constant stirring serves the same end, preventing the rice from sticking together.

The rice variety we call for, Arborio, is essential for creating the creaminess that is one of the wonderful qualities of risotto. It contains a high proportion of the kind of starch that makes the dish so delightful. You'll find Arborio rice in the rice or gourmet section of supermarkets, Italian groceries, and specialty stores.

Veal Scaloppine with Marsala

1-1/2 cups fresh mushrooms, quartered, halved, or sliced
1/4 cup sliced green onion
4 teaspoons margarine or butter
8 ounces veal leg round steak or sirloin steak or 2 skinless, boneless chicken breast halves
1/8 teaspoon salt
1/8 teaspoon Watkins Black Pepper
1/3 cup dry Marsala or dry sherry
1/4 cup chicken broth prepared from Watkins Chicken Soup Base
1 teaspoon Watkins Parsley

  1. In a 12-inch skillet cook mushrooms and green onion in 2 teaspoons of the hot margarine or butter for 4 to 5 minutes or until tender. Remove from skillet; set aside.
  2. Meanwhile, cut veal into 2 serving-size pieces. Place one piece of veal or one chicken breast between 2 sheets of clear plastic wrap. Working from center to edges, pound lightly with the flat side of a meat mallet to about 1/8-inch thickness. Remove plastic wrap. Repeat with remaining veal or chicken.
  3. Sprinkle meat with salt and pepper. In the same skillet cook veal or chicken in the remaining hot margarine or butter over medium-high heat about 1 - 2 minutes on each side or until cooked through and light brown. Transfer to warm dinner plates; keep warm.
  4. Add Marsala or sherry and chicken broth to drippings in skillet. Bring to boiling; boil gently, uncovered, about 1 minute, scraping up any browned bits. Return mushroom mixture to skillet; add parsley. Heat through.
  5. To serve, spoon the mushroom mixture over meat. Serve immediately. Makes 2 servings. Note: Double this recipe to serve 4.

Bittersweet Hot Fudge Sauce

Make this indulgence for your family and friends!

24 ounces semisweet chocolate, coarsely chopped
8 ounces unsweetened chocolate, coarsely chopped
3-1/2 cups half-and-half or light cream
1-3/4 cups sugar
1 teaspoon Watkins Double-Strength Vanilla
Vanilla ice cream

  1. In a 4-quart Dutch oven combine the chocolates, half-and-half or light cream, and sugar. Bring to boiling; reduce heat. Simmer mixture, uncovered, over low heat about 2 minutes or until mixture is creamy, stirring frequently. Remove from heat; stir in the vanilla.
  2. Pour the hot sauce into 7 or 8 hot, clean half-pint jars or 16 (4-ounce) jars, leaving a 1/2-inch headspace. Place metal lids on jars. Screw metal bands onto jars following manufacturer's directions. Store chocolate sauce in the refrigerator for up to 3 weeks. (The sauce must be stored in the refrigerator after placing in jars. Even though the hot sauce may cause the lids on the jars to seal, this is not a secure canning seal. Do not store at room temperature.) Serve sauce warm over ice cream, eclairs, or fresh berries.

Makes eight 1/2-pint or sixteen 1/2-cup jars (128, 1-tablespoon servings)
Note: To reheat, place 1/2 cup sauce in a 1-cup glass measure. Microwave, uncovered, on 100 percent power (high) for 1 minute or until heated through, stirring once. Or, place in a small saucepan. Cook and stir over medium heat about 5 minutes or until heated through.

Double Chocolate Chunk Biscotti

These cookies dissolve tenderly when immersed in coffee or cocoa.

1/3 cup butter
2/3 cup sugar
1/4 cup Watkins Baking Cocoa
2 teaspoons Watkins Baking Powder
2 eggs
1-3/4 cups all-purpose flour
4 ounces white baking bar, coarsely chopped
3 ounces semisweet chocolate, chopped
2 tablespoons shortening 2 ounces semisweet chocolate or white baking bar, coarsely chopped

  1. Grease a large cookie sheet; set aside. In a large mixing bowl beat butter with an electric mixer on medium speed for 30 seconds. Add sugar, cocoa powder, and baking powder; beat until combined. Beat in eggs. Beat in as much flour as you can. Stir in any remaining flour. Stir in the 4 ounces white baking bar and the 3 ounces semisweet chocolate.
  2. Divide dough in half. Shape each half into a 9-inch-long roll. Place rolls 4 inches apart on prepared cookie sheet; flatten rolls slightly to 2 inches wide.
  3. Bake in a 375 degree F oven for 20 to 25 minutes or until a wooden toothpick inserted near the centers comes out clean. Cool on cookie sheet on a wire rack for 1 hour. Using a serrated knife, cut each roll diagonally into 1/2-inch-thick slices. Lay slice, one cut side down, on an ungreased cookie sheet.
  4. Bake slices in a 325 degree F oven for 8 minutes. Turn slices over and bake 7 to 9 minutes more or until slices are dry and crisp. (Do not overbake.) Transfer to a wire rack; cool.
  5. If desired, in a heavy small saucepan combine the shortening and the 2 ounces semisweet chocolate or white baking bar. Cook and stir over low heat until melted and smooth. Drizzle over tops of biscotti. Let stand until set. Store in an airtight container up to 1 week. Makes 32 biscotti.

Raspberry Meringue Hearts

3 egg whites
1 teaspoon Watkins Double-Strength Vanilla
1/4 teaspoon Watkins Almond Extract
1/4 teaspoon cream of tartar
Dash salt
1 cup sugar
1/3 cup very finely chopped toasted almonds
3 cups fresh or frozen loose-pack raspberries
1/4 cup seedless raspberry preserves
1 teaspoon cornstarch
3 cups raspberry, lemon, or papaya sorbet or vanilla or chocolate frozen yogurt
1/3 cup sliced almonds, toasted
Fresh raspberries

Let egg whites stand in a large mixing bowl at room temperature for 30 minutes. Add the vanilla, cream of tartar, and salt to egg whites. Beat with an electric mixer on medium speed until soft peaks form. Add sugar, a tablespoon at a time, beating about 7 minutes on high speed or until stiff peaks form and sugar is almost dissolved. Fold in very finely chopped almonds.

Cover a large baking sheet with clean plain brown paper or parchment paper. Draw six 4-inch-long heart shapes on paper. Using a pastry bag fitted with a large star tip, pipe the meringue onto the hearts on the paper, building the sides up to form shells. (Or, use the back of a spoon to spread the meringue over the hearts, building up the sides.)

Bake in a 300 degree F oven for 35 minutes. Turn off oven. Let shells dry in oven, with the door closed, for at least 1 hour. Remove from paper.

Meanwhile, thaw berries, if frozen. Do not drain. Place half of the berries in a blender container or food processor bowl. Cover and blend or process until berries are smooth. Press berries through a fine-mesh sieve; discard seeds. Repeat with remaining berries. (Should have about 1-1/4 cups.)

In a medium saucepan stir together sieved berries, preserves, and cornstarch. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Remove from heat. Cool to room temperature.

To serve, scoop sorbet or frozen yogurt into meringue hearts. Spoon berry sauce atop. Sprinkle with sliced almonds. If desired, garnish with additional fresh raspberries. Makes 6 servings.

Make-Ahead Tip: Bake the meringue hearts 1 day ahead. Store in an airtight container.

Valentine Berry Parfaits

2 1-inch thick angel food cake slices, cut into 1-inch cubes
3/4 cup fresh strawberries, sliced, or raspberries
1 4-ounce box vanilla pudding
1/4 cup whipped cream or thawed frozen whipped dessert topping
1/2 teaspoon Watkins Double-Strength Vanilla, Watkins Strawberry Extract, or Watkins Raspberry Extract

  1. In a small mixing bowl, gently fold together the vanilla pudding and whipped cream or topping. Stir in extract.
  2. Using 2 parfait or sundae glasses, place one-fourth of the cake cubes in the bottom of each glass. Add one-fourth of the berries and one-fourth of the pudding mixture. Repeat the layers. Serve immediately. Makes 2 servings.

Count the birds - Great Backyard Bird Count!

For the eighth consecutive year, the Cornell Laboratory of Ornithology and the National Audubon Society are planning to count the birds across America during the weekend of February 18-21, 2005. This year's theme is "North America's Great Backyard."

This effort helps define:

  • Where birds are living and in what populations during February.
  • Their migration patterns.
  • Bird habitat needs.
  • How winter weather impacts bird populations.

All of this information contributes to wild bird conservation efforts. It doesn't matter whether you count five species in your backyard or the 75 you see in a day's outing. It's easy to participate:

  • You can spend as much or as little time as you like.
  • You can make it a family outing or school or scout project.
  • Just count the birds in your backyard, park or wildlife refuge.
  • Then report your findings online at www.birdsource.org/gbbc You may also view past years' data.

This year we are encouraging you to go out into America’s Great Backyard, our public lands, and count birds. Take your family to your local National Park, National Wildlife Refuge or other public space with a bird checklist printed from the website, and count the birds you see. Then return to your computer and enter the birds you noted earlier to the central computer through the Internet. We will then add your sightings to those that others reported to present a full picture of our bird life. Please encourage your friends, family, and colleagues to take part too and help us spread the word.
